Jollof Rice



  • 1 can tomatoes (stewed)

  • 1 habanero pepper (optional)

  • 1 small yellow onion 

  • 1 cup oil

  • 4 tbsp spice blend

  • 4 cups jasmine rice

  • 2 cups water

  • 1 tsp salt (optional)


  1. Blend onions, tomatoes and pepper till it’s smooth.

  2. In a medium pot heat the oil and add the blended mixer.

  3. Cook the blend on medium to low heat while stirring occasionally till all the water is absorbed and blend is thickened (45 mins).

  4. Add spice blend and stir. Cook for about 3 mins.

  5. Add the rice and stir till the rice is well incorporated in the sauce.

  6. Add water and taste to see if additional salt is required.

  7. Cook till the water is absorbed (20 mins)

  8. Stir and cover with plastic wrap and the lid for about 20 mins till the rice is soft.

  9. ENJOY!!
