Waakye & Goat Meat Stew

Ingredients

Waakye

  • 2 cups black-eyed beans
  • 10 cups water
  • 3 tbsp grounded waakye leaf
  •  4 cups jasmine rice
  • 1 tbsp salt

Goat meat stew

  • 1 can tomato puree
  • 1 can crushed tomato
  • 1 habanero 
  • 4oz chopped ginger
  •  3lbs goat meat
  • 1 tbsp salt
  • 2 tbsp ginger powder
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp cayenne pepper 
  • 1 tbsp salt
  • 1 tbsp chicken bullion 
  • 4 tbsp Ama's spice blend 
  • 2 tbsp salt (optional)

Directions

  1. Rinse beans and bring to boil in 4 cups of water until they become tender (30-40 mins) *Add more water if needed.

  2. Add waakye leaf (whole or powdered) into the beans and boil together.

  3. Add rice

  4. Add remaining water

  5. Add the salt

  6. Bring boil on high heat

  7. Turn fire down to low heat and cover with plastic wrap. Add the lid on top. (15-20 mins)

  8. Cook rice until rice is tender. Add more water to soften to ones liking.

****USE CAN BEANS IF YOU WANT TO SAVE TIME**** JUST SKIP STEP 1****

Waakye

Goat Meat Stew

  1. Mix the goat meat with all the spices

  2. Place into the the pressure cooker on high for 35 mins 

  3. While inside the cooker heat sauce pan and add oil.

  4. Add chopped half onion  and cook till translucent 

  5. Blend remaining onions, pepper, and ginger to a consistent blend

  6. Add blend to the cooked onions and stir (5min-10mins)

  7. Add the tomatoes to the mixture and set on medium heat for 20 minuets or until sauce starts to thicken.

  8. stir occasionally and add cooked goat meat.

  9. cook for about 5 more mins.

  10.  ENJOY

****YOU CAN COOK THIS ON THE STOVE IN A POT IF YOU DON'T HAVE A PRESSURE COOKER (ABOUT AN HOUR OR STILL MEAT IS TENDER)****
